Dark Chocolate Berry Bark
Looking for a fun and festive chocolate treat to make for Valentines day? You will love this recipe! The bark is beautiful with the bright red from the strawberries and raspberries and it is very addicting! This recipe can also be made with Enjoy Life chocolate to make the bark dairy and gluten free. This is a fun and easy recipe to make with kids or package up to give to friends!
Dark Chocolate Berry Bark
Ingredients:
1-10 oz bag Enjoy Life dark chocolate chips (for gluten & dairy allergies)
or 1-10 oz bag Ghirardelli dark chocolate chips, or your favorite brand
1- 1.2 oz bag freeze dried strawberries (I found mine at Trader Joes)
1- 1.2 oz bag freeze dried raspberries
Sea Salt for garnish (I like to use Maldon Sea Salt but any flaky salt will work)
Directions:
Line a baking sheet with parchment paper.
Add the chocolate to a microwave safe bowl and microwave for 30 second increments, stopping to stir each time. Alternately this can be done over a double boiler. The goal is to melt the chocolate until it is smooth and no chunks of chocolate chips remain.
Immediately pour the melted chocolate onto the sheet tray lined with parchment paper and use a spatula to spread the chocolate to about 1/8 inch thickness. You can definitely make this thicker if you’d like.
Before the chocolate sets, sprinkle the freeze dried strawberries and raspberries on top of the melted chocolate. You can break them up a little in your hands before sprinkling on top or add them whole. Finish with a light sprinkling of sea salt. Carefully use flat hands to press the berries down in the chocolate to insure that they stick properly.
Let the bark cool and harden either in the refrigerator or in a cold room (like the garage in the winter). When the chocolate has set, break or cut into pieces and enjoy!
Chocolate will keep best if stored in an airtight container in the fridge in a cool room. I used parchment to wrap mine for gifting with a little ribbon. They also look beautiful in clear cookie bags. Feel free to mix up your toppings, you can use nuts and coconut if you’d like!
